Deep Fryer Recipe

I normally don't like fried things. (It must be the nutritionist coming out in me.) But, my kids absolutely love it when I make homemade chips. We don't keep chips around much so it's kind of a special treat. It is also really easy if you have a deep fryer.

Homemade Tortilla Chips

Package of corn tortillas
Canola Oil
Salt

1. Fill the deep fryer to maximum level with oil and heat to 375 F.
2. Tear tortillas in fourths and fry 10-12 at a time until crisp (just a couple of minutes).
3. Drain on a paper towel and salt according to taste. They are best warm, but my kids like them the next day too.

If you watch the first batch you'll get an idea of the time required to make them crisp. The more tortillas you use at a time, the longer it takes to fry. You just need to keep them separated a bit. These go great with Taco Soup!
